Whole- Wheat Bread

Ingredients

Light Wheat Bread: Replace the whole-wheat bread flour with 3 cups whole-wheat flour and 3 to 3 1/2 cups white bread flour. Whole-Wheat Raisin Bread: Add 1/2 teaspoon cinnamon to the dough along with the salt. Stir in 1 cup raisins after 2 cups of the flour have been added.

Directions

In a large mixing bowl, dissolve the yeast in the water. Stir in the honey and let stand for 5 minutes, or until the yeast is foamy. Stir in the salt, oil and 2 cups of the flour. Beat until smooth. Stir in enough of the remaining flour to form a soft dough. Cover with a damp cloth and let the dough rest for 15 minutes.

Turn the dough out onto a lightly floured surface and knead for 10 to 15 minutes, or until the dough is smooth and elastic.

Coat a clean large bowl with no-stick spray. Place the dough in the bowl, cover with a damp towel and let rise in a warm place for 35 to 45 minutes, or until the dough is light and doubled in bulk.

Coat two 9" x 5" or 8" x 4" no-stick loaf pans with no-stick spray. Gently deflate the dough with your fist and knead to eliminate air bubbles. Divide the dough into 2 equalsize pieces and shape into oblong loaves. Place in the prepared pans, cover with a damp cloth and let rise in a warm place for 40 to 45 minutes, or until the dough is light and almost doubled in bulk.

Preheat the oven to 375°F. Bake the loaves for 30 minutes. Reduce the oven temperature to 350°F and bake for 10 to 15 minutes longer, or until a toothpick inserted in the center comes out clean. Immediately remove from the pans and cool on a wire rack.
Recipe Notes
The 100% whole-wheat bread flour makes a great-textured light loaf in this recipe. This type of flour is available in health food stores and some supermarkets. For an easy substitution, see the Light Wheat Bread variation below.

I have never made whole wheat bread with all whole wheat flour and had it turn out so light and rise so high. It's one of the best bread recipes I've used.
