Walnut "Pate"

If you're a pate fan, chances are that once you taste this richly flavored-and cholesterol free-version, you'll never crave the real stuff again. For best results, allow to come to room temperature before serving.

Ingredients

Directions

Heat the oil in a skillet over medium heat until sizzling. Add the walnuts. Cook for 3 minutes, stirring occasionally, or until toasted. Add the onion, raisins, thyme, and paprika. Cook, stirring, for 5 minutes or until the onion is softened. Add the garlic. Stir just until the garlic is incorporated. Remove from the heat. Cool to room temperature.

Transfer the mixture to the bowl of a food processor fitted with a metal blade or a blender. Process, scraping the bowl as needed, for about 3 minutes or until a coarse paste forms. Add the lemon juice, parsley, salt, and pepper to taste. Pulse just until combined. Serve immediately or refrigerate for up to 1 week.

This a decent recipe but hardly a substitute for the real thing. It is simple enough and tasty for vegetarians but if you really like real pate, you may be disappointed.
