Traditional Pumpkin Pie

Native Americans first introduced the American colonists to pumpkin, and this historic family-pleasing pie has been a mainstay on Thanksgiving Day tables ever since. The mild, sweet pumpkin is delicately contrasted with warm and spicy cinnamon, ginger, and nutmeg. Definitely a dessert to be thankful for.

Directions

Pie Crust: To make a single 9" basic pie crust; in a large bowl, combine the flour and salt. Cut in the butter and vegetable shortening until the mixture resembles coarse crumbs. Sprinkle 2 to 5 tablespoons ice water over the crumbs and toss with a fork until the dough holds together. Gather the mixture into a ball and press into a thick disk. Cover and refrigerate for 15 to 30 minutes before rolling out.

Pie: Preheat the oven to 400°F.

Roll the pie dough out to an 11" circle. Place the dough in a 9" pie plate. Firmly press the dough against the bottom and sides of the pan. Fold the edges under and crimp the crust.

Whisk the eggs in a large bowl. Whisk in the pumpkin, evaporated milk, brown sugar, rum or bourbon (if using), vanilla extract, cinnamon, ginger, nutmeg, and salt until well-blended. Place the filling in the prepared crust.

Bake for 10 minutes. Reduce the oven temperature to 350°F and bake for 40 minutes, or until the crust is browned and the filling is just set in the center. To prevent overbrowning, cover the edge of the crust with foil if necessary during the last 15 to 20 minutes of baking. Cool on a rack for at least 2 hours. Chill in the refrigerator until ready to serve.

excellent recipe, I had more filling than would fit into the shell, so I poured the rest into ramekins (2) and baked them along side until knive in center came out clean.
