The New Classic Reuben

Directions

Place 4 slices of the bread on a work surface. Spread evenly with the dressing. Top with layers of the turkey, sauerkraut, and Swiss or Jarlsberg. Cover with the remaining bread slices. Coat the tops with nonstick spray.

Set a large nonstick skillet over medium heat.Place the sandwiches, coated side down, in the skillet. Cover and cook for 3 to 4 minutes, or until the bottoms are golden brown. Coat the tops of the sandwiches with nonstick spray. Carefully turn the sandwiches over. Cover and cook for 3 to 4 minutes, or until the bottoms are golden and the cheese is melted. Cut each sandwich in half.
Recipe Tips
Although the fat and sodium in this sandwich are relatively high, the overall nutritional profile is profoundly better than the original Reuben, which contains around 30 grams of fat and 2,000 milligrams of sodium.
Recipe Notes
Fat Free Thousand Island Dressing: It's easy to make your own fat-free Thousand Island drssing, and it will stay fresh for up to a week, covered, in the refrigerator. In a medium bowl, combine 1/2 cup low-fat mayonnaise, 1/2 cup fat-free sour cream, 1/4 cup chili sauce, 2 tablespoons pickle relish, 1 small finely chopped onion, and 1 tablespoon chopped fresh parsley. Season with ground black pepper to taste. Makes about 1 1/4 cups.
