Spinach Lasagna

Ingredients

Serves: Prep:  25min |Cook: 1hr 15min |Total: 1hr 40min
              

Directions

1.
Preheat the oven to 375°F. Coat a 13"x 9" baking dish with cooking spray.
2.
Prepare the noodles according to the package directions. Drain.
3.
Cook the mushrooms, onion, and garlic in the oil in a medium saucepan over medium-high heat for 7 to 10 minutes or until soft. Add the tomatoes, tomato sauce, spinach, and Italian seasoning. Bring to a boil. Reduce the heat to low; simmer for 15 minutes.
4.
Place half of the noodles in the prepared baking dish. Spread with half of the cottage cheese. Sprinkle with 2 cups of the mozzarella. Cover with half of the tomato mixture. Repeat.
5.
Cover and bake for 30 minutes. Uncover and sprinkle with the remaining 1 cup cheese. Bake for 12 to 15 minutes or until hot in the center.
Recipe Tips
A simple way to determine if lasagna and other casseroles are hot all the way through is to insert a knife in the center. As soon as you remove it, carefully feel the knife with your fingers. If it's hot, the lasagna is ready.
