Spicy Sweet Potato "Fries" with Creole Mustard Dipping Sauce

Ingredients

Serves: Prep:  10min |Cook: 25min |Total: 35min
              

Directions

1.
Preheat the oven to 375°F. Coat a large baking sheet with cooking spray.
2.
Peel the potatoes and cut in half through the middle. Cut each potato half into 1/2"-thick sticks. Heap onto the baking sheet. Drizzle the oil over the potato sticks. Sprinkle with the Cajun seasoning. Toss to coat. Spread out the sticks so they don't touch. Bake for 25 minutes, or until browned and tender.
3.
Meanwhile, combine the mayonnaise, mustard, horseradish, and scallion in a bowl.
4.
Serve the fries with the mustard sauce for dipping.

Really good if you like spicy foods. We decided the dipping sauce would be good on other foods, too (think hamburgers). Very easy to make.
