Raspberry Ribbon Pie

Light and delicious, with super eye appeal.

Ingredients

Serves: Prep:  30min |Cook: 28min |Total: 3hr 28min
              

Directions

1.
Red Layers: Soak gelatin in a little bit of cold water for 3-5 minutes, dissolve gelatin and sugar in boiling water. Add berries and lemon juice. Stir until berries thaw. Chill until partially set.
2.
White Layers: Blend cream cheese, confectioners' sugar, vanilla, and salt. Fold in small amount of whipped cream first, then fold in remainder.
3.
Spread half of white cheese mixture on bottom of pie shell. Cover with half of red gelatin mixture. Repeat layers, ending with red layer on top. Chill until set. Garnish with more whipped cream on top, if desired.
