Cook bacon until crisp. Drain and break up into small pieces. Scatter pieces evenly on bottom of pastry shell. Saute onion, if using, in bacon fat until soft, then distribute evenly in bottom of pastry shell with bacon. Beat eggs, cream, salt, and pepper together. Add cheese. Pour egg mixture into shell on top of bacon pieces. Cut butter into tiny dots and scatter over top of custard. Set pie plate on cookie sheet and place in 375°F oven. Bake for 40-50 minutes, checking after 25 minutes and thereafter every 10 minutes or so. Quiche is done when a silver knife inserted into center comes out clean. Cool on cake rack and serve warm. Reheats well.
