Orange And Herb Turkey Cutlets With Maple- Sauteed Apples

To protect their flavor, make sure to store apples in a plastic bag in the refrigerator, away from strongly odored foods such as cabbage or onions. Gala apples are particularly good in this recipe because they tend to hold their shape nicely when cooked.

Directions

Mix 1 tablespoon of the oil, 1 tablespoon of the orange juice, the garlic, sage, rosemary, orange zest, salt, and 1/2 teaspoon of the pepper in a cup. Rub all over the turkey cutlets.

Heat 1 1/2 tablespoons of the oil in a large nonstick skillet over medium heat. Add the apples and cook, turning often, for 9 to 10 minutes or until tender and translucent. Add the syrup, cinnamon, and remaining pinch of pepper. Toss to mix and cook for 1 minute longer. Transfer to a bowl and cover to keep warm. Rinse and dry the skillet.

Heat the remaining 1 1/2 tablespoons oil in the same skillet over medium-high heat. Add the turkey (in 2 batches, if necessary) and cook, turning once, for 4 to 6 minutes or until browned and cooked through. Transfer the turkey to a warmed platter.

Add the remaining 2 tablespoons orange juice to the pan drippings and bring to a boil, stirring to loosen all the flavorful browned bits. Pour the pan juices over the turkey and serve with the apples.
