Open- Faced Broiled Egg, Spinach, And Tomato Sandwich

Ingredients

Directions

1.
Set the muffin half on a toaster oven pan or double sheet of foil. Top with the spinach and tomato. Lay on the egg slices in an overlapping spiral. Dollop on the mayonnaise and swirl slightly to partially cover the egg slices. Sprinkle on seasoning to taste.
2.
Place under the broiler for 2 to 3 minutes, watching carefully, until the mayonnaise is lightly browned.

This recipe is very good. I have made a couple of changes using Orowheat Sandwich Thins (using the whole thin as a sandwich) and also if I am out of tomatoes I have used fresh salsa; then using Mrs. Dash Spicy gives it alot of flavor.

I'm going to try it with some salsa/hot sauce/etc. instead of the mayo - yummy

You need to fix your times at begining of recipe. Spinach needs to be cooked, and the whole thing goes under the broiler. This doesn't equal 0 cook time and total prep of 2 minutes!!!! If you can't get this info correct, how can I trust your other info?

Lighten up!! It's obviously a technical error...if you can't figure that out you shouldn't be in a kitchen!!

actually if you read the ingredients list ... it LISTS the spinach to be cooked ALREADY.
