I really liked this recipe....I doubled the spinach and the mushrooms...I also did not drain the tomatoes. I added a teaspoon of red pepper flakes and it gave the recipe just a little bit of zing.
This is a good basic recipe. I would suggest not draining the can of tomatoes because when you do so, you lose the flavor and nutrients. Also, for the reviewer who said it was bland, you can easily make it more flavorful by adding more garlic and some Italian herbs or rosemary.
This recipe was easy to make and very tasty. Only thing I did differently was covered the pan for a couple minutes after adding the spinach, tomatoes and mushrooms. I forgot to cut the chicken before cooking, but that wasn't an issue....just did it after it was being kept warm on the plate.
