No-Sugar Apple-Grape Jam: Replace the pears with 3 pounds McIntosh apples.
In a large stainless steel saucepan, combine the pears, grape juice concentrate and 2 of the thyme sprigs (if using).
Bring to a simmer and cook, stirring frequently, for 35 to 40 minutes, or until the liquid is reduced.
Remove from the heat. Remove and discard the thyme. Add the remaining 2 sprigs thyme (if using). Using the back of a wooden spoon, press the sprigs against the bottom and sides of the pan. Let steep for 5 minutes. Remove and discard the thyme.
Pour the jam into hot, scalded preserving jars, leaving 1/8" headspace. Wipe the rims clean, attach the lids and tightly screw on the caps. Invert the jars for 10 seconds.
Cool on a wire rack. Store in the refrigerator.
