Mushroom Strudel

This makes a wonderful lunch item along with a salad.

Ingredients

Serves: Prep:  20min |Cook: 45min |Total: 1hr 5min
              

Directions

1.
Preheat the oven to 375°F. Coat a baking sheet with cooking spray.
2.
Lightly coat a large nonstick skillet with cooking spray and cook the mushrooms, onion, and garlic over high heat for about 10 minutes, or until the liquid has evaporated. Stir in the cream cheese, chives, salt and pepper to taste, and nutmeg.
3.
Lay the phyllo dough on a clean dish towel and spread the mushroom mixture about 1" away from the short edge of the dough. Fold the sides over about 1/2" and use the towel to help you roll it up like a jellyroll. Place the roll on the prepared baking sheet and coat it lightly with cooking spray.
4.
Bake for 30 to 35 minutes, or until the phyllo is golden brown. Allow it to cool for 5 minutes before cutting individual portions.

The filling was absolutely delicious, but there wasn't very much. I would increase the amount made. Despite that, it was a very good dish!
