Maple Oatmeal Bread

A good substantial bread subtly flavored with maple. Terrific with peanut butter. If you like your bread sweet, include the honey.

Directions

Dissolve yeast in lukewarm water with sugar for 10 minutes or until foamy. In large bowl, combine oats, maple syrup, coffee, water, honey, if using, shortening, and salt. Stir until shortening is melted and let cool until lukewarm. Stir in 1 cup white flour, eggs, and yeast mixture, and beat with electric mixer until smooth. Add remaining 3 1/2 cups white flour and whole wheat flour, 2 cups at a time, and beat dough until smooth and elastic. Form dough into ball, transfer to greased bowl, and turn to coat both sides. Let dough rise, covered, for 1 hour and 30 minutes, or until doubled in bulk. Punch down dough. Divide between 2 buttered 9" x 5" loaf pans, and let rise, covered, for 1 hour. Bake at 350°F for 45 minutes. Turn out on racks to cool.
