Leafy Grilled Chicken Salad With Creamy Balsamic Dressing

Directions

Puree beans, oil, vinegar, garlic, basil, and 1/8 teaspoon salt in blender until smooth (makes 1 cup). Divide greens evenly among 4 plates and top with chicken, onion, and tomatoes. Drizzle each serving with 1/4 cup of the dressing.

This recipe was fantastic - kids and husband LOVED it - still have leftover dressing for other meals.

forgot to mention that I grilled my chicken with olive oil and tarragon - the tarragon flavor really added that right extra dimension to the recipe - I also found the dressing a little thick so added a tad of white wine to it - it was perfect
