Lamb Burgers With Tomatoes And Feta Cheese

Directions

In a large bowl, combine the lamb, garlic, rosemary, pepper, and salt. Using a fork, break up the meat and mix in the seasonings. Form 4 patties approximately 4" in diameter and 1" thick.

Heat a large, heavy skillet over mediumhigh heat until drops of water skip over the surface. Add the patties. Cook until the first side has a brown crust, 4 to 5 minutes. Turn and cook until the second side is lightly browned, 1 to 2 minutes. Pour off fat, reduce the heat to low, and pour the tomatoes around the patties (the tomatoes will boil briefly). Cook until a meat thermometer registers 160°F for medium, about 10 minutes, turning once more. Season the tomatoes with a pinch of salt and spoon over the burgers. Sprinkle with the cheese.
