Italian Vegetable Stir- Fry Over Polenta

Polenta is a common accompaniment to northern Italian dishes. This colorful, high-fiber dish is especially satisfying when combined with cheese.

Directions

To make the polenta: In a large saucepan, bring the water and salt to a boil. Slowly whisk in the cornmeal. Reduce the heat to low. Cover and simmer, stirring frequently, for 30 to 35 minutes, or until the polenta thickens. Stir in the cheese. Cover and keep warm.

To make the stir-fry: Heat the oil in a large nonstick skillet over medium-high heat. Add the onion, bell pepper, and fennel. Cook, stirring frequently, for 2 to 3 minutes, or until the vegetables begin to soften. Add the zucchini, chickpeas, garlic, red-pepper flakes, and salt. Cook, stirring constantly, for 2 to 3 minutes, or until the vegetables are crisp-tender. Add the tomatoes. Cook, stirring frequently, for 1 minute, or until the tomatoes soften. Stir in the basil. Serve over the polenta.
