The next time you're tempted by fast-food french fries, consider baking a batch of these herbed potatoes instead. A medium portion of fast-food fries may be laden with as much as 20 grams of fat. These have a little over 2 grams.

You can use fresh parsley plus any dried herb or combination of herbs you like on the potatoes. Basil, marjoram, dill, and oregano are all good.
Preheat the oven to 450°F. Coat a rimmed baking sheet with cooking spray.
Scrub the potatoes and cut them into 1/2"-thick matchsticks. Pile the potato sticks in the center of the prepared baking sheet and sprinkle with the parsley, oil, thyme, pepper, and salt. Toss to coat well, then spread the potatoes out in an even layer.
Bake the potatoes, turning them several times, for 20 to 25 minutes, or until they're crisp and browned.
