Greek Shrimp with Tomatoes and Feta

This popular Mediterranean island dish comes together in a snap to create a dinner that's distinctive. Be sure to serve crusty bread on the side to mop up the delectable sauce.

Bagged frozen shrimp is a convenient pantry item for hasty tasty meals. For fast thawing, soak the shrimp in a large bowl of cold water for about 30 minutes.

Directions

In a large skillet, heat the oil, onion, and garlic over medium-high heat. Cook, stirring occasionally, for 4 minutes, or until golden. Add the tomatoes (with juice), oregano, salt, and pepper. Cover and reduce the heat to medium-low. Simmer for 5 minutes. Add the shrimp. Toss to coat with the sauce. Scatter the cheese on top. Cover and simmer for 4 to 5 minutes, or until the shrimp are opaque.
