Gingerbread

Served with a dollop of whipped cream or a few tablespoons of hard sauce, this classic cake is lovely for tea or dessert.

Ingredients

Serves: Prep: 15min|Cook: 40min |Total: 55min
              

Directions

1.
Preheat the oven to 350°F. Grease a 9" x 9" baking pan.
2.
In a medium bowl, combine the flour, pumpkin pie spice, baking powder, baking soda, and salt.
3.
In a large bowl, with an electric mixer on medium speed, beat the butter and brown sugar for 3 minutes, or until light and fluffy. Add the egg and molasses and beat well. Add the flour mixture and, with the mixer on low speed, beat until well-blended.
4.
Bake for 35 to 40 minutes, or until a wooden pick inserted in the center comes out clean. Cool completely on a rack.

I don't understand how this is gingerbread with no ginger in it - am
I missing something?
