Fruit and Cheese Toast

Upgrade your morning toast with a savory spread loaded with dried fruit. We use figs, golden raisins, and dates, but dried apricots, cranberries, or cherries are delicious alternatives. If you don't like goat cheese, try creme fraiche, ricotta, quark, queso fresco, or fromage blanc.

Directions

1.
Combine the cheese and butter in a small bowl and use a fork to work the mixture until blended and smooth. Stir in the chopped fruit.
2.
Toast the bread and transfer to a wire rack. (This will prevent the toast from steaming and becoming soggy.) Spread equal amounts of the cheese mixture over the toast while it is still warm. Cut into halves before serving.
