Fresh Strawberry Pie

Ingredients

Serves: Prep:  10min |Cook: 2hr 5min |Total: 2hr 15min
              

Directions

In a medium saucepan, combine the gelatin and cornstarch, stirring to eliminate any lumps. Stir in the water and bring to a boil over medium heat, stirring. Cook and stir for 5 minutes, or until the mixture goes from cloudy to clear. Transfer to a large bowl, and let cool to room temperature (or refrigerate, stirring every few minutes to prevent jelling).

Set aside a small amount of strawberries for garnish. Fold the remaining strawberries into the gelatin mixture. Pour into the pie crust. Refrigerate for at least 2 hours, or until set. Decorate with dollops of whipped topping and the reserved strawberries.
