Flex Your Mussels

Mussels are the original fast food. Seriously--they cook in about 3 minutes. Before you begin, rinse them well and look them over. Discard any with open shells. They should all be tightly shut before you add them to the pot.

Directions

In a large pot, combine the celery, onion, water, oil, all-purpose seasoning, and pepper. Bring to a boil over high heat.

Add the mussels, wine, and parsley. Reduce the heat to medium. Cover.
3.
Cook for 2 to 3 minutes, or until the mussels have opened. Discard any that haven't opened.
Recipe Tips
When mussels are harvested, a little salt water gets trapped inside. When you cook them, they open and that briny water is released into the dish. This isn't a bad thing, but it does raise the overall sodium content of the meal.
Serving Suggestions
Give garlic bread a Muscle Chow makeover. Simply brush a small amount of olive oil onto whole grain bread; sprinkle with some ground black pepper, a little minced garlic, and a pinch of parsley; and toast to a golden brown.
