In a 10" no-stick skillet over medium-high heat, bring the orange juice to a boil. Add the onions, peppers, zucchini and eggplant. Cook and stir for 5 minutes, or until the vegetables soften. Add the tomatoes, garlic and Italian seasoning. Cook and stir for 3 minutes.
Cover and reduce the heat to medium. Cook for 10 minutes, or until the stew thickens.
