Date and Almond Laced Muffins

Orange marmalade, a preserve containing pieces of citrus rind, is the sweetener in this unique recipe. Tasters gave it an enthusiastic thumbs up. We're sure you will, too.

Ingredients

Directions

1.
Preheat the oven to 425°F. Grease a 12-cup muffin pan.
2.
In a medium bowl, combine the flour, baking powder, cinnamon, baking soda, salt, and cloves. Add the dates and almonds. Toss gently.
3.
In a large bowl, stir together the milk, marmalade, oil, egg, granulated sugar, and orange peel until well-blended. Stir in the flour mixture until just combined. Do not overmix.
4.
Divide the batter evenly among the prepared muffin cups, filling them about two-thirds full. Evenly sprinkle the cinnamon sugar over the muffin batter. Bake for 12 to 15 minutes, or until a wooden pick inserted in the center of a muffin comes out clean. Cool on a rack for 5 minutes. Remove to the rack to cool completely.
