Curried Sweet Potato and Apple Soup

Ingredients

Serves: Prep:  16min |Cook: 30min |Total: 46min
              

Directions

Heat the oil in a large saucepan or Dutch oven over medium heat. Add the onion and garlic and cook, stirring occasionally, for 5 minutes, or until tender.

Add the ginger, curry powder, cumin, salt, and cinnamon. Cook, stirring constantly, for 1 minute. Add the water, sweet potatoes, and apples and bring to a boil over high heat. Reduce the heat to low, cover, and simmer, stirring often, for 20 minutes, or until the sweet potatoes are very tender.
3.
In a food processor or blender, puree the soup in batches until very smooth, pouring each batch into a bowl. Reheat if necessary. Stir in the cilantro.

I may have changed this for the worse by slow cooking it all, because when I tasted sour Granny Smith apples as the predominate flavor I thought, yuk! After refrigerating there was a bit more of a blend in flavors, but it never really came together, even after recooking stovetop and adding more of the spices. I don't know what went wrong but it wasn't a favorite at all....I ended up dumping the rest. I will try another version of the sweet potato soup recipes here, but never again with the tart Granny Smith's.....something sweeter would've been better IMO.

yum! the scents and taste of the harvest season with Thanksgiving and Christmas aromas added. Awesome!! So far guys hate it though, mine said it was a dessert, like thin pie or pudding, he likes stew consistency.....

I made this and it was so good. My husband, my teenage son and my older son didn't really care for it. But I thought it was wonderful. It also made the house smell wonderful, like Winter! The cinnamon, cumin and curry together have a warming aroma!
