Heat the oil in a skillet over medium heat for 1 minute. Add the peanuts and curry powder. Cook, stirring constantly, for about 2 minutes or until golden. Add the onion, cilantro, salt, and ground red pepper, if using. Cook for about 2 minutes or until the onion is golden. Serve warm or at room temperature.
