Citrus- Avocado Salad

This salad provides lots of potassium and vitamin C while filling me up at lunchtime to help me lose weight.

Ingredients

Serves: Prep:  10min |Cook: 0min |Total: 10min
              

Directions

1.
To prepare the salad: In a large shallow salad bowl, arrange the greens. Top with the oranges and avocado. Sprinkle with the walnuts.
2.
To prepare the dressing: In a small bowl, whisk together the lime juice, oil, cilantro, salt, and pepper. Drizzle over the salad. Toss gently.

I made this recipe for an upscale administrative meeting in a hospital. I received rave reviews. I used an immersion blender to make my dressing and drizzled over the salad and served. I did not toss since I felt the self serve would toss the salad. The only downside is dealing with the oranges.....
