Cinnamon Buns With Coffee Glaze

Ingredients

Directions

To make the dough: In a large bowl, dissolve the yeast in the water. Let stand for 5 minutes, or until the yeast is foamy. Stir in the milk, egg, sugar and salt. Stir in 2 cups of the flour and beat until the batter is smooth and elastic. Gradually stir in enough of the remaining 1 1/2 to 2 cups flour to make a dough that forms an irregular ball. Let the dough rest for 15 minutes.

Turn the dough out onto a lightly floured surface and knead, adding flour as necessary, until the dough is smooth and satiny.

Coat a clean large bowl with no-stick spray. Place the dough in the bowl, cover with a damp cloth and let rise for 1 hour, or until the dough doubles in bulk.

To make the filling: Coat a 9" x 13" no-stick baking dish with no-stick spray; set aside. In a small bowl, combine the brown sugar and cinnamon; set aside.

Roll the dough out to make a 24" x 14" rectangle. Spread the butter over the dough. Sprinkle with the brown-sugar mixture. Starting with the long end, tightly roll the dough. When completely rolled, pinch the edges to seal. Cut into 1" slices and place the slices, cut side down, close together in the prepared pan. Let rise for 45 minutes, or until puffy and almost doubled in bulk.

Preheat the oven to 350°F. Bake the buns for 25 to 30 minutes, or until golden.

To make the glaze: In a small bowl, mix the confectioners' sugar, salt and vanilla. Stir in the coffee, 1 teaspoon at a time, until the mixture is smooth and pourable. Drizzle over the warm rolls.
