Chuck Wagon Barbecued- Beef Sandwiches

Campfire cooks can't afford to waste any ingredients. This ingenious recipe makes use of leftover brewed coffee to produce a distinctive barbecue.

Directions

Coat the inside of a 5- to 6-quart slow cooker pot with cooking spray. Combine the coffee, tomato paste, sugar, vinegar, cornstarch, chili power, salt, and pepper. Whisk until smooth. Add the onion and bell pepper and raisins. Add the beef, turning the pieces to coat with the sauce. Cover and cook on the low-heat setting for 8 to 9 hours.

Remove the beef to a cutting board. Transfer the sauce to a food processor fitted with a meat blade. Process until smooth. Or, with an immersion blender, puree the sauce until smooth. If using the food processor, return the sauce to the pot. Slice the beef (it will be very tender and will almost fall apart) and return it to the pot. Spoon the barbecue onto the buns.

Note: Chuck Wagon Barbecued-Beef can be cooked on the high-heat setting for 4 to 4 1/2 hours.
