Caramelized Onion And Sweet Potato Soup

For a smoother soup, transfer the ingredients to a food processor after the ingredients are fork-tender and puree in batches. Return to the pot, reheat, and serve.

Directions

In a large pot over medium-high heat, melt the margarine or butter. Add the onions and cook, stirring constantly, for 5 to 7 minutes, or until browned. Add the sugar and cook, stirring, for 3 minutes longer. Add the sweet potatoes, broth, allspice, thyme, nutmeg, salt,and pepper and bring to a boil. Quickly reduce the heat to low and continue to simmer, uncovered, for 15 to 20 minutes, or until the sweet potato pieces are fork-tender. Adjust the seasonings and serve.

Such an easy and tasty way to get your veggies and all that healthy sweet potato. It tastes really rich but is low fat. I’ve made it 6 times now. My kids will eat it if I puree it in the food processor as recipe suggests, they love it that way but aren’t so keen if its not all smooth!!!!

My kids like it, too - what's not to like? It's like candy soup with the sugar and sweet spices!

This is very tasty. I made it with olive oil instead of butter, and it worked fine.
