Brown Rice with Peppers and Zucchini

"Brown rice is so filling and the vegetables are so colorful that this dish is very pleasing to the eye and therefore, the stomach. It can be varied by using different veggies and even adding chicken, so that I can make several different-tasting dishes using the same basic recipe."

Use the remaining pepper halves and zucchini by tossing into tomorrow's dinner salad. Or, serve as a side dish the next day--simply toss with a tablespoon of olive oil in a baking dish, season to taste, and roast for 15 minutes.

Directions

Prepare the rice according to package directions, adding the bouillon to the water instead of salt.
2.
Meanwhile, heat the oil in a large skillet over low heat. Add the bell peppers, zucchini, cilantro, basil, and salt. Increase the heat to medium and cook, stirring, for 3 minutes, or until crisp-tender. Serve the vegetables over the rice.

My daughters, my husband and I all enjoyed this recipe very much! It was extremely tasty, as well as healthy. The only suggestion I would have is to use reduced sodium broth instead of bouillon to make it more healthy, and also to cook the bell peppers for a minute or two before adding the zucchini so the zucchini isn't entirely soaked in the salt and floppy while the peppers remain crisp and don't absorb the flavors. Otherwise, great recipe!

My husband and I enjoyed this recipe, too. I didn't even add any chicken; the veggies and half the olive oil were great and not dry at all.
