Broccoli And Cheese Pasta Salad

Directions

1.
Prepare the rotini according to the package directions. Add the frozen broccoli to the pasta water during the last 5 minutes of cooking. Drain the pasta and broccoli and rinse under cold running water to halt the cooking process. Transfer to a large bowl and add the Cheddar cheese, olives, and ranch and Italian dressings. Toss gently to combine and top with the tomatoes and Parmesan cheese. Chill for at least 1 hour or overnight.

I love pasta salads and this is a really good one. Really quick to make when you get in the door. I make it the minute I get home, then leave it to chill while I unpack and sort things out. If I’m eating alone, I eat much more than one portion but that will be my dinner.
