Better Beef Burgers

Ingredients

Top the burgers with grilled onions or a mixture of grilled onions and grilled sweet red or yellow peppers. For a delicious horseradish sauce, combine 1/2 cup nonfat plain yogurt, 1 tablespoon snipped fresh dill, 2 teaspoons prepared horseradish and 1 teaspoon sweet pickle relish. Add a dollop to the burgers just before serving. Beef-and-Tofu Burgers: Replace the mushrooms with 1/2 cup reduced-fat silken (soft) tofu, drained and patted dry with paper towels. Combine with the onions, Worcestershire sauce and hot-pepper sauce in the bowl. Beef-and-Bulgur Burgers: Replace the mushrooms with 1/2 cup cooked and cooled bulgur. Combine with the onions, Worcestershire sauce and hot-pepper sauce in the bowl.

Directions

Coat a medium no-stick skillet with no-stick spray and warm over medium heat. Add the onions and mushrooms. Cook, stirring frequently, for 4 to 5 minutes, or until the mushrooms are lightly browned. Place in a medium bowl and set aside to cool.

Stir in the parsley or thyme, Worcestershire sauce and hot-pepper sauce. Add the beef and mix quickly with your hands to combine. Shape into 4 burgers, 3/4" thick.

Coat an unheated grill rack with no-stick spray. Light the grill according to the manufacturer's directions. Place the rack on the grill.

Place the burgers on the rack and grill about 6" from the heat for 5 to 6 minutes per side, or until browned and cooked through. Serve on the rolls with the lettuce (if using) and tomatoes (if using).
