In a large saucepan, combine the apples, currants, tomatoes, onions, honey, vinegar, water, garlic, mustard seeds, pepper, and ginger. Bring to a boil over medium-high heat.
Slice the lime into 4 lengthwise wedges. Cut each wedge into thin crosswise slices. Add to the saucepan. Reduce the heat to mediumlow. Simmer the mixture until the apples are tender and the mixture thickens slightly, about 15 to 20 minutes.
Cool, then refrigerate in a covered container for several days to allow the flavors to develop.
The chutney can be refrigerated for several weeks or frozen for several months in a covered container.
Serve with grilled or broiled turkey breast, chicken drumsticks, or pork tenderloin.
