A Big Fat Greek Salad

With a nod to the heart-healthy cuisine enjoyed by our Mediterranean friends, this robust salad is loaded with monounsaturated fats and fiber.

Ingredients

Serves: Prep:  20min |Cook: 15min |Total: 35min
              

Directions

1.
In a large salad bowl, mix the oil, lemon juice, vinegar, oregano, and pepper with a fork.
2.
Add the tomatoes, chickpeas, cucumber, red onion, parsley, and olives. Toss to mix well. If you have time, let marinate for 15 minutes.
3.
Add the greens and feta and toss again.

My husband is not a huge vegetable fan...he RAVED about this salad. The only thing I added was a generous shaking of garlic powder to the dressing. It's a must to let it sit for at least 15 minutes before serving!

I loved the combination of the vegtables but I thought there were too many chick peas for my taste. I would reduce to half a can for a serving of four. I added garlic to my dressing too.
